Oatmeal, oatmeal, oatmeal I feel like that is all I ever eat for breakfast. So naturally I was very excited when my friend, Lily Uhler, decided to share her new breakfast on Facebook that included the super grain quinoa. It sounds a little odd to have quinoa for breakfast, but let me tell you this recipe is delicious and pretty simple.
There are only four ingredients to this recipe:
1. Fruit of your choice: I chose blueberries and a sliced banana
2. 1/4 cup warm vanilla coconut milk
3. 1 Cup cooked quinoa
4. Agave to taste (optional). The vanilla in my coconut milk made it sweet enough for me.
The cooked quinoa part is the only part of this breakfast that could make it potentially time consuming. To make this breakfast easy to do in a busy morning you have two options: make a batch and have it precooked for breakfast in the morning or use a rice cooker and start the quinoa while you are doing other stuff. We have a Pampered Chef microwaveable rice cooker that is awesome and cooks the quinoa in 12 minutes. Most quinoa packages have rice cooker instructions on the back of them.
Once the quinoa is cooked, simply mix the ingredients together and enjoy. I prefer the quinoa warm so if you made a big batch you might want to heat it up with the coconut milk. That is all to it. I hope you enjoy it and if you like the recipe then feel free to share on Facebook or Pin it.
