Everyone has a zucchini bread recipe, but this was by far the best zucchini bread that I had ever tasted and then I took out the eggs and replaced it with applesauce and it became delectable. I wasn’t sure if I would like it egg-less, but it definitely did not disappoint.
Preheat oven to 325 F
3 cups flour ( I use white whole wheat flour)
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp cinnamon
2 1/4 cups sugar
3/4 cup applesauce
3 tsp vanilla
2 cups grated zucchini
1 cup vegetable oil
At this point you can separate the dry ingredients and mix them, then do the same with the wet ingredients and then mix it all together. I just mix them all together at once and do just fine.
This should make 2 loaves. Bake for 45-60 minutes.
If you don’t have applesauce to use as a substitute, this website has some great ideas. If anyone tries the flax seed substitute, let me know how it works out.
