Lime and Cilantro Quinoa and Garbanzo Bean Salad


I first saw this recipe on where else but Pinterest and could not wait to try it. It came from a site called the Diva Dish, which if you are interested at all in healthy, vegetarian cooking it is definitely a place to check out. The original recipe also calls for Avocado which is so great for you, but unfortunately I am allergic so I had to change things up a bit. I also chose to change out the lemon for lime because I think a lime/cilantro combination is heavenly.

Ingredient List:

1/2 C. dry quinoa

1 C. vegetable broth

1 can garbanzo beans (drained and rinsed)

1 c. cherry tomatoes cut in half

2 C. spinach

1 bunch cilantro

1/4 C. onion

2 small cloves garlic

For the dressing:

Juice of 2 limes

2 tsp. dijon mustard

2 tsp. olive oil

1/2 tsp. cumin

dash of salt and pepper


First cook the quinoa according to package instructions with vegetable broth instead of water. I like to put mine in our Pampered Chef Rice Cooker and it cooks perfectly and very quick. Image

While the quinoa is cooking, rinse the garbanzo beans and put them into a large bowl.


Then add the chopped spinach, cilantro, tomatoes, onion and garlic to the garbanzo bean bowl. Image

Once the quinoa is cooked add it to the garbanzo mixture.

Top with the dressing, mix well and chill for approximately 1 hour.
